What to eat while watching Rugby (or pretending to watch Rugby…)

IMG_20150919_185620Ahhh the world cup. Sports, rugby, early starts and Richie McCaw…

I am not a huge fan of sports, I am really bad at remembering the rules or how it all works but I like to annoy the people watching the game with really important questions such as ‘How much longer does it have to go?’ or ‘Ányone hungry?’

Anyway to celebrate the first game of the cup (or the fact I was up before 7am on a Saturday) I made pancakes with the awesome Maiden South Breadfruit flour.

Breadfruit flour is my new fave. It is gluten free, you can swap it 1:1 for any flour in your baking, and it supports the best part of the world. The south pacific, Samoa to be exact.

Breadfruit flour nutritionally is amazing as well. It is:

High in potassium

High in fibre (super important and not at all common in gluten free flours)

High in Vitamin A (important for skin health)

Great source of prebiotics (important for gut health)

As well being an awesome source of antioxidants, magnesium and it has a really neutral taste that will not taint your baking.


3/4 cup breadfruit flour

1/2 cup brown rice flour

1 1/2 tsp baking powder

Pinch of salt

2 tsp cinnamon

1/2 – 3/4 cup of coconut sugar

1 egg

1/2 – 3/4 cup Almond milk

Mix the dry ingredients together. Add in egg, then slowly add in almond milk and mix until everything is smooth.

Fry in coconut oil.

Makes about 15 smaller sized pancakes.

Serve with coconut yoghurt, berries, chia jam and almond butter.

So give this recipe a go and celebrate grown men running around on a big lawn in style.
