This recipe is super easy you can throw it in the slow cooker and watch a few episodes of some intellectual TV show like Nashville or Shortland Street omnibus.
2 cans of tomatoes (Check there is no added sugar)
3/4 chopped brown onion
80ml apple cider vinegar
1 tablespoon rice malt syrup
1 teaspoon mixed spice
2 teaspoons cinnamon
1 teaspoon ground cloves
1/4 teaspoon cayenne pepper
salt and pepper
Throw everything into the slow cooker. Place on high and cook for three hours.
Or you can bring it to a boil, then simmer for 40minutes until the sauce has reduced by half and is quite thick.
Once cooked, blend with a stick blender or in a normal blender. If it is still runny, you can place back on heat for another 30 minutes.
Tomatoes are so good for you, high in lycopene and antioxidants. Cayenne pepper is great for digestion, it also helps circulation. Cinnamon helps balance your blood sugars, and best of all this tomato sauce has no sugar!
Freeze half the batch if you, unlike my husband, only use tomato sauce sparingly. Enjoy.
