Coconut cream ice cream WITHOUT an ice cream maker that your husband won’t let you buy because apparently you have too many appliances and cookbooks…

coconut_1I love ice cream; however it is an unrequited love. Normal diary based ice cream and I do not get on so well, so I have circumvented this issue and made a coconut cream ice creamy thing.

Recipe below:

One can of chilled coconut cream (don’t try and not chill it. I thought I knew better than everyone else and did not chill it. Turns out they were right – just this once).
2 tbs cacao powder
2 tbs maple syrup
3 drops peppermint essential oil

Get the chilled coconut cream out of the fridge and scoop out the thickened cream. Reserve the liquid for other uses (smoothies/soups). Whisk the cream until it is light and thick.
Add in cacao powder and maple syrup and peppermint oil.
Put into container seal with gladwrap then put the lid on and freeze.
In thirty minutes take it out of the freezer, whisk again and refreeze.
Do this 3 times.

You can make any flavour you like
E.g.
Salted caramel
Berry
Chocolate chip
Nuts and dried fruits
