Beetroot & Chocolate snack ball thingys

Beetroot_chocolate_ballsBeetroots are super good for you. Your liver loves them as they help with detoxification and they also help with your cardiovascular health due to their nitrates. Nitrates are converted to nitric oxide in the body, this helps to widen blood vessels and lower blood pressure. They are also high in antioxidants. Chocolate is good for the soul. Sorted! Try these beetroot and chocolate snack ball things (top right in picture).

Ingredients

1 cup brazil nuts
3 dates
1/4 cup sultanas
3tbs maple or rice syrup
1 grated large beetroot
1 cup Coconut desiccated
1/4cup cacao powder
1 tbs psyllium husk

Blend all together. Before that soak sultanas and dates in hot water, drain and mash together. Make the mixture into balls press a hole in the ball with your finger for the filling. Keep 1/2 cup aside to cover the chocolate middle.

Filling
50g cacao butter melted
1/2 cup cashew nuts
1/4 cup cacao powder
1/4 cup maple syrup
1tsp lemon juice
1/2 tsp tamari sauce

Blend all ingredients except the butter, as the blender is going slowly drizzle in the cacao butter.
Fill the holes in the balls and cover the chocolate with the 1/2 cup of original mixture.
